chicken and cabbage stir fry

Ingredients
1 lb ground chicken1/2 head of shredded cabbage1 cup bell pepper cut in strips1/2 cup onions sliced1/2 cup carrots shredded4 Tbs Lite Soy Sauce1 Tbs Olive Oil
Directions
In large saucepan or wok, heat olive oil over med-high heat. Add ground chicken and cook, stirring occasionally until browned. Add peppers, onions and carrots and heat over med-high heat, stirring frequently for 2-3 minutes. Add cabbage, soy sauce, water and pepper. Cover and reduce heat to med-low. Cook about 10 minutes or until veggies are tender. Serve over brown rice.

    yummy - used whole chicken breasts instead of ground chicken - 4/13/10
