Rumbamel's White Chicken Chili from Joudan

-2 1/2 c water-1/2 t lemon juice-1/2 t black pepper-1 ground cumin-4 boneless skinless chicken breasts (19 oz)-1 clove garlic (1/2 t)-1 t ground cumin-1 c chopped onion-2 cans (14-15 oz) corn drained (about 3 C)-7 oz can diced green chiles-2 T or 1 oz lime juice-2 cans (15 oz) white beans undrained
Bring water, lemon juice, pepper, and 1 t cumin to a boil. Add Chicken and return to a low boil. Simmer for about 10 minutes or until chicken is fork tender and juices run clear. Take chicken out and cut into bite size pieces, then return to pot.
Add remaining ingredients and bring to a low boil. Simmer for 45 minutes stirring occasionally until thoroughly heated and thick.
Enjoy with jalepenos, cheese and light sour cream (none of these three are calculated in the nutrition but taste great with it)
Makes about 10.5 servings of 1 c each
