Crock Pot Irish Lamb Stew

Ingredients
* Lamb, Cubed, 1 lb (remove) * *Potato, raw, 3 medium (2-1/4" to 3-1/4" dia.) * Onions, raw, 1 large * Carrots, raw, 1 cup, strips or slices * *Pearl Tapioca, .25 cup * Sherry, dry, .5 fl. oz * Water, tap, 1 cup (8 fl oz) * Bay Leaf, 1 tbsp, crumbled * Peas, frozen, 1 package (10 oz) * Salt, 1 tsp * Pepper, black, .125 tsp
Directions

Place vegetables, except peas, in bottom of 4-6 quart crockpot. Sprinkle on tapioca. Cut lamb into 1-1/2" cubes and season with salt and pepper, add to crockpot. Pour water and sherry over all; add bay leaf.
Cover and cook on low for 10-12 hours.
Add peas last 30 minutes of cooking.

    ery good. I use pearl barley instead of tapioca, and omitted the sherry as I had none. Instead I used lots of thyme, sage, rosemary and garlic. - 11/3/09
