Tony Chachere's Shrimp & Okra Gumbo

2 lb shrimp2 lb okra2 T veg oil1 stick margarine4 T flour1 green bell pepper2 stalks celery2 cloves garlic1 T worcestershire sauce1 T chopped scallions1 onionabout 1.5 quarts waterTony Chachere's creole seasoning (essential!)
Chop okra
Fry it about 10 minutes in veg oil and set aside
In dutch oven, heat margarine over med-lo heat, and add flour, stirring constantly, to make roux (when it's caramel colored, it's done)
Add all the vegetables and cook until wilted
Add water (vary according to how soupy you like it), seasonings (according to taste), and cook for 1/2 - 2 hours.
Note if you use Tony's seasoning it contains salt, so you don't need additional salt!
Add the shrimp last and cook 5-10 minutes more, until it's pink.
Serve over rice.
