Desi's Sugar Free French Toast Souffle

Ingredients
2 whole eggs + 4 egg whites3/4 cup of fat free milk1/8 - 1/4 cup of splenda or other sugar substitute1/4 cup of sugar-free maple syrup 1/2 tsp vanilla extract1/2 tsp almond extract1/2 tsp cinnamon1/2 tsp nutmegpinch of salt6 slices low cal white bread
Directions
Whisk all ingredients together, except bread, until nice and frothy and it smells lovely...
Break each slice of bread into 4 pieces and add to egg mixture. Mix it around gently so all your bread gets soaked....
Lightly spray 8x8 in baking dish with butter flavor cooking spray. Pour bread & egg mixture into baking dish (I've also used a 1 1/2 quart souffle dish, and I'm sure smaller individual ramekind would be fine as long as you adjust your cooking time), sprinkle top with additional cinni & nutmeg if desired....
At this stage you can go ahead and bake at 350° F for 25 - 30 minutes or until it’s all poofy and lightly brown…or you can refrigerate overnight and bake in the morning...
Sometimes I feel naughty and add a tablespoon or so of sugar free preserves or a banana or some berries or something. This can be added to the egg and bread mixture before it goes into the baking dish. Another nice little extra touch that I may add is some freshly roasted and chopped nuts ( almonds, hazelnut, walnut, pecans). These can also be added to your egg and bread mixture.
