Meatloaf Vegetable Muffins

Ingredients
1 lb. Ground Beef (extra lean)1/2 c. Quarkers oatmeal (uncooked)1 c. chopped onion1/2 c. chopped celery1/2 c. chopped green or red pepper1/2 c. chopped carrot3 garlic cloves1 can chopped mushrooms1. c. canned diced tomatoes w/ juice2 egg whites
Directions
Heat oven to 350.

Chop vegetables. Saute all but the tomatoes and garlic in a lightly oiled pan (olive oil) untill done but not mushy. Cool vegetables.

Combine ground beef, oats, cooled cooked vegetables, chopped mushrooms and egg whites.

Spoon the meat mixture into a muffin tin sprayed w/ vegetable spray. Top each muffin w/ 1 T. catsup. Make 12 equal size "muffins.".

    My youngest daughter ate an entire one! (she's only 20 months). We cooked them for 25 minutes. We skipped the garlic and put the tomatoes in with the meat mixture. They were thoroughly cooked and tasted great. We used ground turkey as an alternative as well. - 7/1/09

    I didn't precook the veggies (I like crunchy) just chopped very fine. Used fresh spinach, carrots, mushrooms, onion, 1 tomato, garlic, red pepper flakes, oregano, and a little of this and that for spices. No ketchup. Cooked 40 minutes - used pan underneath.     The taste is really good but you need to know how to cook to get all the ingredients in and know how long to bake to use this recipe. I will leave the tomatoes out next time because it tends to deplete the meat taste. But I really like it and they freeze well for later. - 1/7/10

    I made these last night and they were great! I used ground turkey instead and topped them each differently, some with BBQ sauce, some with spaghetti sauce, and some with ketchup for variety. You definitely get your vegetable servings with this meal too! I will definitely be making these again! - 4/26/10

    I used 12 oz bag of Morning Star Griller Crumbles instead of the meat. I also used egg beaters (equivalent of 2 eggs)

    I substituted ground turkey for the ground beef and dehydrated onions for the raw sweet union. 1 and a half jalapenos and finished up the 1/2 cup with sweet bell pepper. - 6/14/10

    The recipe leaves you to figure out what to do with the canned tomatoes and the garlic and how long to bake. The fat from the meatloaves has nowhere to go but to the bottom of your oven, so make sure you put a sheet pan under it. Good idea to put a lot of veggies in, but the mixture is too loose. - 12/2/09

    I made this last night, and my husband liked it better then the full-fat version I used to make. I added the garlic with the rest of the veggies when I sauteed them, and I used a can of Rotel instead of the diced tomatoes. And I cooked them about 45 minutes. - 4/13/10

    I left out the carrots and celery, and diced the tomatoes very finely before combining them with the meatloaf mix. I must say, this was absolutely delicious! And it is very versatile! You can sneak virtually any veggie you choose into this recipe. The mushrooms added awesome flavor and texture! - 1/5/10

    This reads very much like my meatloaf. You can put this in a loaf pan as well and make it the traditional way, but I think I like the portion aspect of making cupcakes! - 5/30/21
