Polish Red Cabbage Soup--Sweet 'n Sour

1 Tblsp bacon fat, or use your favorite oil1 large Yellow Onion, coarse chop3-4 ribs center stalks Celery with leaves, coarse chop1 dried Red Pepper (or pepper flakes), crumbled3-4 cloves Garlic, chop fine1/4-1/3 cup Balsamic Vinegar3-4 Tblsp Splenda (be careful to balance vinegar and sweetness)6 cups Red Cabbage, chop into small pieces1 28 oz can Whole Tomatoes, crush or chop6-8 cups Chicken StockSalt & Pepper1/2 cup parsleySour CreamCrumbled bacon
Sauté onion, celery, garlic and red pepper in the bacon fat (or oil of choice) until tender. Sauté the veggies with a little salt to enhance the flavors. Add vinegar and Splenda along with the cabbage, tomatoes and chicken stock. Simmer uncovered for 45 minutes or until the cabbage is tender. Taste and adjust seasonings.

I think the person who added this recipe needs to edit it for servings--there is no way that 6 cups of cabbage, plus all those other ingredients, equal only one serving. I want to try the recipe--it sounds really good--but it needs to be edited to reflect ACTUAL servings, please! - 1/30/16
