Turkey Burger, Carrot, Rice Casserole

Ingredients
I lb. ground turkey or chicken1 cup uncooked rice2 10.75 oz, cans tomato soup1 cup shredded carrots1 cup chopped onions1 tsp saltdash of pepper 2 cups boiling water1/3 cup shredded cheddar cheese
Directions
Combine all ingredients (except cheese) in a large casserole dish. Mix well. Bake covered at 350 degrees for approx. 2 hours or until rice is cooked. Sprinkle with 1/3 cup of cheese and let melt before serving. Serves 8

Note: You can substitute 1 quart of tomato juice in place of tomato soup and water. Will change the dietary information.
