Crispy Chicken Fingers

4 boneless, skinless chicken breasts4 cups of smashed up Cornflakes2-3 egg whites1 tsp. cracked sea salt (or to taste)1 tbsp. cracked pepper (or to taste)
-Prepare chicken breasts & cut lengthwise (about 4 cuts per breast)
-Smash up Cornflakes in a Ziplock bag & add cracked sea salt & pepper & shake, shake, shake. Place this mixture in a shallow dish.
-Place egg whites in a cereal bowl.
-Dip chicken in egg whites & let drip a bit & then roll in the Cornflake mixture.
-Place on a cookie sheet that has been given a spray of Pam
-bake at 400 degrees for about 15 minutes per side or until done (no longer pink - cuz pink chicken is not good for you unless your doctor is really hot & you'd like to visit him!)
-serve with various sauces (I like Sweet Red Chili Sauce, Honey Mustard, BBQ - or whatever floats your boat) and some crunchy carrot sticks.

Great taste - but then most severe diarhea I have ever had (maybe need to cook longer).
