Lima Bean Salad

Ingredients
1 15.5 oz. can Butter Beans drained & rinsed1 15.5 oz. can Lima Beans drained & rinsed1 16 oz package Frozen Mixed Vegetables1 15.5 oz. can Diced Tomatoes with liquid1 8 oz. can tomato sauce1 medium onion, chopped1 medium green bell pepper, chopped2 Tbsp. Olive oil1 tsp. salt1/4 tsp black pepper
Directions
Using a 3 quart covered saucepan heat oil on high. Lower heat to medium and saute onion and bell pepper until tender, about 10 minutes. Stir in the remaing ingredients and when the mixture bubbles all over, cover and simmer on low for 20 minutes. Turn off heat and stir well. Cover and let stand 10 minutes. Makes 8 one cup servings.

    This is amazing and so simple. I didn't feel like cooking, this looked easy enough. I used frozen onions and peppers so I didn't have to chop, I am sure it would be even better with fresh. But we LOVED it. I will make this again. - 5/23/09
