Ingredients
2 cans black beans, rinsed1 bag frozen corn (17oz), thawed1/2 to 1 red bell pepper, diced1 small zucchini, diced1/2 small red onion, dicedjuice from 2 limes1/2 bunch cilantro, chopped1 Jalapeno, chopped (deveined and deseeded)1-2 Avocado, dicedSalt and pepper to taste
Directions
Mix all ingredients together. Enjoy! Makes about 9 1-cup servings.
