Baked Salsa Chicken

Ingredients

1 1/2 cups uncooked brown rice1 can diced tomatoes (w/ Jalepenos)1 can corn, drained2 lbs boneless chicken breast2 1/2 cups water1 pkg Taco Seasoning
Preheat oven to 375. Place rice, corn, and tomatoes in 13x9x2" baking dish. Place chicken on top.
Mix water and seasoning until well blended. Pour over chicken and rice. Cover with foil and bake for 50 minutes or until chicken is cooked through and rice is tender.
**I use diced tomatoes with jalapenos for an added kick!!
Makes 6 1-cup servings
