Green Bean and Almond Salad

1/3 cup almonds1&1/2 lbs green beans, ends snapped off and bean cut in half or quartered crosswise if large3 Tbsp extra virgin olive oil1 Tbsp white wine vinegarSalt and pepper to taste
Toast the almonds in a 350° oven untl they smell good and barely begin to turn pale brown, about 15 minutes.
Boil the green beans for about 5 minutes and rinse them in running cold water for about a minute until they are cool. Drain and pat dry with paper towels.
Just before servng, toss the beans with the almonds, oil, vinegar and salt(if desired) and pepper to taste.
MAKES 6 SERVINGS
