Mashed Potato Salad

Ingredients
6 large potatoes, peeled6 hard boiled eggs2 heaping serving spoons of light mayo1 heaping serving spoon of mustardchopped chivesone jar diced pimentos, drained4 dill pickles, diced1 Tablespoon pickle juice1 teaspoon sugarsalt and pepper to tastePaprika
Directions
Peel and quarter the potatoes. Cover with water and boil until just soft. Drain completely and set aside.

Hard boil the eggs.

Combine the rest of the ingredients in large, preferably yellow pyrex, bowl. Add 5 chopped hard boiled eggs.

While potatoes are still hot, mash lightly, leave some chunks. Add to dressing mixture. Slice one hard boiled egg and arrange on top. Sprinkle with paprika.
