Sweet and Sour Chicken

1 lb. chicken, cubed2 tbsp. olive oil3/4 cup shredded carrots1 green bell pepper, strips1 red bell pepper, strips1 clove garlic, minced1/4 cup soy sauce, reduced sodium1 tbsp corn starch1 8oz. can of pineapple, including juice1 tbsp vinegar1 tbsp brown sugar1/2 tsp ground ginger
Makes 4 servings.
Brown chicken in oil in skillet over medium high heat. Add peppers and garlic and stir fry for 2 minutes. In a small bowl, mix the soy sauce and corn starch, add to skillet and stir. Add the can of pinapple, vinegar, brown sugar, and ground ginger. Stir until thouroghly heated.
Serving Suggesstion: serve over brown rice
