Prune Bran Muffins

Ingredients
1/2 Cup cooking oil1/4 cup molasses1/4 cup packed brown sugar1 egg2/3 cup milk1 cup unprocessed bran1 cup all purpose flour1 tablespoon baking powder1/4 teaspoon salt1 cup diced Sunsweet Prunes
Directions
Grease muffin pans or line with paper bake cups; set aside. In medium mixing bowl combine oil, molasses, brown sugar and egg; beat well. Stir in milk and bran. In large mixing bowl combine flour, baking powder and salt. Add bran mixture. Mix just till dry ingredients are moistened. Stir in prunes. Spoon batter into prepared muffin cups, filling 3/4 full. Bake in 400 degree F oven for 15 to 18 minutes or till done. Makes 12 muffins.

    I was surprised at how good these muffins are. The only modification I made to the recipe is I used whole wheat flour instead of regular white to up the fiber content. My kids really liked them, good way to sneak some extra fiber in them. - 10/19/07
