Bok Choy & Carrot Stir Fry

Ingredients
Large bunch of bok choy, chopped coarsely (about 2 cups)1/2 cup chopped green onion1 cup thinly sliced carrot1 tsp. sesame oil1/2 tsp. soy sauceblack pepper to taste
Directions
Heat oil in a wok or large frying pan on high. Add carrots and saute about a minute. Add bok choy and onion. Saute about four minutes or until bok choy is wilted (but stems are still kind of crunchy). Add pepper and stir in the soy sauce right at the end.

Yields 4 1/2-cup servings.

    Since the sesame oil is mainly there for seasoning, I decided to throw it all in a microwave steamer bag instead of sauteeing. The subtle seasoning and combination of vegetables was really good. - 4/20/12

    Just tried this recipe for something different. Good combo of veges and had to add al ittle more soy sauce (used low salt) but great side dish with grilled chicken and rice. - 10/2/09
