carrot and coriander soup

Ingredients
450g carrots (peeled and chopped)Large onion (peeled and chopped)tbsp olive oiltsp ground coriander2 cloves garlic2 stock cubes (add 2 pints of boiled water to it)fresh coriander (chopped)
Directions
Heat the olive oil in a large saucepan, add the diced onion and crushed garlic, fry off for about a minute. Add the chopped carrots and fry for about 5 minutes, add the ground coriander stir in well and add the hot stock. simmer for about 30 minutes or until the carrot is soft. put into a blender and blend until smooth add the fresh coriander.

    I love this recipe! I make enough for 2 large servings and after having some for lunch, I put the rest in a tupperware dish in the refrigerator... Now, I have a healthy, homecooked lunch for tomorrow, without having to actually cook! :) - 7/31/11

    I think that I used too much onion and not enough carrotts. Also, I added chili powder and curry powder to give this soup some extra bite. I loved the texture of it and it tasted really nice with the added spices. Will definitely make again! - 1/13/10

    i love this soup! it may sound weird but i love cilantro and lime together so i added a little lime juice and cayenne pepper it came out so good i am in love with this, thanks for the recipe!! - 11/20/09

    I also added a teaspoon of ground cumin and 1/2 teaspoon of turmeric, along with fresh cilantro (coriander) as a garnish. Very tasty! - 3/4/09
