Chicken Quesadilla (Basic)

Ingredients
1 lb chicken breast1 cup cheddar cheese1 cup of mozzarella cheese8 8" flour tortillas (regular) sub with wheat for lower cal. intake3 tbl EV Olive OilPam
Directions
Add Olive Oil to bottom of pan. Season your chicken and add to pan and bake until done. Slice chicken in thin bite size pieces and put to the side. Warm large skillet and spray slightly with pam. Add a flour tortilla and turn it after it brown a little (your pref of how dark), once you turn it add chicken about the size of you palm, and cheese to one side of the tortilla. Fold the tortilla in half and flip once the sides are brown and the cheese is melted.

If you do not have this much time to do them one at a time, add the chicken and cheese on the tortilla, fold them in half, and bake until cheese is melted.

Also, you can add onions, jal. peppers, mushrooms, etc.

You can eat alone or garnish with sour cream or salsa
