Quick Breakfast Burrito

Ingredients
2 Large Eggs1 Tbsp Fresh (or dried) Chives1 dash Black pepper2 Tbsp Salsa1 Tbsp Hummus1 Large size high fiber, reduced calorie tortilla
Directions
In a small, microwave safe container beat eggs, chives and pepper until yolk and white are combined (about 30 seconds). Heat egg mixture in microwave on high for about 90 seconds.

While the egg is cooking, smear hummus along one edge of tortilla and pile salsa along the center. Add cooked egg to tortilla and roll from the non-hummus side.

(The hummus will hold the burrito closed and add a slightly creamy texture without using dairy fat.)
