Carrot souffle

Ingredients
1 lb of cooked carrots1/2 stick butter1/4 cup sugar1/4 cup splenda2 TB flour1 TB baking powder3 eggs1 tsp cinamin or nutmeg
Directions
Cook carrots until soft, drain and add cooked carrots to food processor. Add butter, sugar, splenda, flour, baking soda, cinamin or nutmeg and then eggs. Blend until puddinglike.
Put in greased dish and bake at 350 for 40 minutes or until set like custard

    The only issue I have with this recipe is that it is a little too sweet for my tastes, and I will reduce the sugar next time. I also used cake flour to make it lighter. A delicious sweet, with lots of nutrition. - 5/13/17
