Apple Cinnamon French Toast

6 Slices Martin's Whole Wheat Potato Bread1 8oz container egg substitute1/4 cup skim milk1 tsp vanillacinnamon (from 1 tsp -2 TBS depending on taste)2 apples sliced thin1 TBS brown sugarcinnamon (from 1tsp to 2TBS depending on taste)
Cut bread slices in half on a diagonal. In large shallow bowl whisk together egg product, milk, vanilla, and cinnamon. Soak bread in mixture.
While bread is soaking add apples, brown sugar, and cinnamon to heated non-stick skillet coated with non-stick spray. Cook apples over medium low heat, stirring occasionally, until soft.
Heat non-stick griddle or skillet. Cook bread slices, on medium high heat, until desired doneness, flipping once during cooking.
Put three bread halves on each of four plates, top with a quarter of the apple mixture each. Serve while still warm.
You can add some pure maple syrup to each dish but this will increase the calorie and sugar count.
