Baked Tilapia with Onions and Peppers

Tilapia, 4 4-oz fillets1/2 medium onion, slicedBell pepper, any color, slicedSalt and pepperOlive oil
Preheat oven to 425 degrees.
Coat the bottom of a 13X9 baking dish with olive oil. Spread sliced onion and bell pepper in a single layer in the dish. Season with salt and pepper. Put fish fillets on top of onion and bell pepper slices in a single layer. Season with salt and pepper.
Bake in oven, uncovered, for 10 minutes or until done. Serve with brown rice.
Makes 4 servings of 1 tilapia fillet and 1/4 cup of onions and peppers.
