Cottage cheese pancakes

Ingredients
1/2 cup flour1 cup cottage cheese1/4 tsp salt1 tsp vanilla1 cup egg substitute(or four eggs)1/4 cup vegetable oil1/2 cup milk
Directions
Beat all ingredients on high for 1 minute. Use a skillet on medium heat and make pancakes 4 inches in diameter. You can top with jam, syrup, honey, peanut butter, etc.
