Curry apple chicken salad

Ingredients
16 oz cooked chicken breast3 medium apples (gala or honeycrisp)1/3 cup packed raisins (regular or golden)3/4 cup fat free mayonnaise1.5 TBS Curry powder4 dashes Garam Masala spice
Directions
Cook chicken breasts to yield 16 oz cooked. Recommend boiling, but you could bake or grill instead.

Core and chop the apples into roughly 1/2 size pieces. Combine with raisins. Once chicken has cooled, add to apple mixture and add in the fat free mayonnaise. Stir until completely mixed, then add the spices and stir again. Add salt to taste if desired.

Yields approximately 2.5 lbs of salad (enough for two people to have a couple of lunches for the week)

    This was amazing! I made a smaller version, added walnuts and celery, omitted the Masala spice. I couldn't believe how well the textures and flavors went together. The curry powder definitely made the salad. Thank you for sharing, I think this has become my favorite salad! - 6/21/09
