Ingredients: Olive Oil, 1 tbsp Onions, raw, 1 medium (2-1/2" dia) Garlic, 4 clove Canned Tomatoes, 1 can 28 ozChicken Broth, reduced sodium 2 cup (8 fl oz) *Italian Sausage, pork, cassings removed 1 lbpepper, black 1 tspwhole wheat french bread , 8 slice, thinMozzarella Cheese, part skim milk, 1 cupOregano, ground, 1 tbsp Carrots, raw, 2 medium
Pre heat broil
saute onions with olive oil and add garlic. Cook until onions are slightly brown. Add tomatoes and crush with the back of your fork. Add chicken broth and pepper as well as the oregano. Simmer for a few min
Laddle into soup cups. Top with bread rounds with crusts removed and lightly toasted. Add two tbsp of shredded mozzerella onto the toasted bread and pop uder the broiler for 1 - 2 min
