1 cup whole wheat flour1 tsp baking powder1/4 tsp salt5 tbsp melted butter.66 cup sugar.66 cup brown sugar1/2 tsp vanilla extract1 1/2 medium bananas (mashed).125 cup egg substitute3/4 cup nestle semi-sweet chocolate mini morsels
1. Preheat oven to 350. Grease 24 mini muffin cups.
2. Combine flour, baking powder and salt in medium bowl. Beat butter, sugar, brown sugar, and vanilla in large mixer bowl until creamy. Beat in bananas and egg. Gradually beat in flour mixture; stir in morsels. Spoon batter evenly into prepared cups, filling 2/3 full.
3. Bake for 15-20 min or until wooden pick inserted in center comes out clean. Cool 10 min on wire rack.

MAINEROCKS
I swear I followed this to a T but the muffins caved in the middle. Taste was OK (little too sweet for me) but I had to dig a bite out with a fork. Also, made much more than 24 minis. Sorry. I do bake frequently so it was a surprise. Maybe there is an ingredient missing or something? - 11/14/09
