Rich and Spicy Black Bean Soup

Ingredients
1 tsp Canola Oil1 cup, chopped Onions, 3 cloves minced Garlic1 tsp ground Coriander 1 tsp ground Cumin3 - 14 oz cans low sodium vegetable or chicken, or beef broth 2 cans Black beans, drained and rinsed, 3 cups total14 oz can Petite Cut Diced Tomatoes, or use tomato with jalapenos or chilis1/3 cup Salsa
Directions
Heat oil and onion in large stock pot over med heat. Cook 5 min stiring occasionally. Add garlic and spices, cook 1 min.
Add broth and tomatoes bring to a boil. Add beans and salsa and simmer 15 min. Makes 8.5 1 cup servings
