* Carrots, raw, 6 large (7-1/4" to 8-1/2" long) (remove) * Mushrooms, fresh, 453.5 grams (remove) * Olive Oil, 1 tbsp (remove) * Garlic, 4 cloves (remove) * Egg, fresh, 2 large (remove) * Cheddar Cheese, 1 cup, shredded (remove) * Bread crumbs, dry, grated, plain, 2 cup (remove) * Cheddar Cheese, .5 cup, shredded (remove) * Dill weed, fresh, .5 cup sprigs (remove)
saute onion & garlic in oil till translucent. add mushroom, black pepper to taste, dill and cook till soft. Meanwhile, grate carrots in food processor and place in large mixing bowl. beat eggs and add to carrots along with 1 c. cheddar and bread crumbs. When veggies are done cooking, mix in with carrots. place in grease 9x13 baking pan and top with remaining cheddar and dill. Bake 30 minutes covered at 350, and additional 15 min. uncovered.
