Creamy Cheddar Spinach

1 box frozen Spinach, chopped, well drained1/4th tsp nutmeg, groundblack pepper to taste1 C. medium cheddar cheese, grated1/4th C .low fat milk
Spray a 4x9 inch loaf pan with non-fat oil. Spread
spinach in bottom of pan; sprinkle with nutmeg
and pepper.
Place milk then cheese in a small container and
melt on low in microwave, or on stove burner on
simmer to low heat. Pour mixture over top of the
spinach making sure it is completely covered.
Bake uncovered in 350* oven about 30 minutes,
or until cheese is bubbly on top. Let cool for at
least 10 minutes, then cut into 4 servings.
