Baba Ghanoush with White Beans

Ingredients
Eggplant, fresh, 1 eggplant, roasted wholeBeans, white, 1 cup Garlic, 2 cloves mincedLemon Juice, 1/4 cupSesame Oil, 1 tbsp Salt, 1/2 teaspoonPepper, black, 1/4 teaspoon
Directions
Roast the eggplant whole at 425 for 40 minutes. Let cool until able to handle. Cut off calyx and squeese pulp out like toothpaste. Drain pulp for 30 minutes.Mix all ingredients in a food processor or blender. Serve with veggies, pita wedges, or crackers.
