Low Carb Chicken Parm

2 boneless/skinless chicken breast cubed1 cup fat free milk, I used organic1/4 cup Italian Bread Crumbs1/2 cup parm cheese1/4 cup EVOO1 tsp minced garlic2 tbsp each of salt and BP1/2 cup parsleyDash of balsamic vinegar3 oz baby lettuce
Mix together milk and 1 tbsp each of salt and BP. Add chicken and let sit in fridge about 10 minutes.
Preheat oven to 500
Mix together bread crumbs and parm. cheese. Take chicken out of fridge and coat each piece and place on baking pan sprayed with EVOO non stick spray. Drizzle a bit of EVOO on top of each piece and put in oven. Let cook about 6 minutes then flip each piece over. Let cook another 6 minutes or until chicken is cooked.
While baking chicken, mix together 1 tbsp each of salt and BP, garlic, rest of EVOO, parsley and a dash of balsamic vinegar.
Split lettuce into 3 dishes and top with chicken. Pour EVOO dressing on top and serve.
