Lamb Shanks with Orzo

Directions
Trim fat from lamb shanks. Stuff lamb with garlic cloves. Place in an onion-lined baking dish. Drizzle with olive oil and season with salt & pepper. Bake at 350 for one hour. Sprinkle lamb with oregano, cinnamon and tomatoes. Bake another hour or until meat is tender.

Pour excess fat from pan. Add orzo, wine, and 4 c. water or stock. The liquids should cover the orzo. Stir well. Return ot oven and bake 45 minutes or until the orzo is done and most of the liquid is absorbed. Top with grated cheese.

Accompany with a big Greek salad, kalamata olives, feta cheese, and crusty bread.
