1 onion - diced2 green peppers – diced1 tsp minced garlic2 chicken breasts, cubed (small)1 tsp dry oregano1 tsp dry basil2 Tblsp olive oil1 cup rice1.5 cup chicken broth1 can Italian diced tomatoes
Chop onions and green pepper, cube chicken. Saute in olive oil with herbs, until chicken is no longer pink. Add remaining ingredients, stir and cover - cook over low / low-med heat until rice is done. Serve!
