Better Banana Bread

1 cup all purpose white flour1 cup white whole wheat flour (the bread doesn't come out nearly as well if using regular whole wheat)1 1/2 tsp baking powder1/4 tsp baking soda1/4 tsp cinnamon1/8 tsp salt1 egg3 medium/large or 4 small bananas, mashed3/4 cup sugar1/4 cup olive oil1/2 cup chopped walnuts
Preheat oven to 350 degrees.
Grease bottom of 13x9 glass baking dish.
In medium bowl, combine flours, baking soda, baking powder, cinnamon and salt. In a larger bowl, combine egg, bananas, sugar and oil. Slowly stir in dry ingredients until well mixed. Fold in walnuts. Spread evenly in pan. Cook for approximately 18 minutes, or until sides and bottom turn golden brown. (This is easy to see in a glass dish).
Makes 15 generous servings.
