Veggie Omelet

Ingredients
1 Cup Pepper Stir Fry1 Cup Mushrooms1/4 Cup Shredded 2% Cheese Mexican Blend6 Egg Whites
Directions
Saute pepper stir fry and mushrooms on stovetop with cooking spray. Cook until all water has evaporated, about 5-7 minutes. Place veggies in an oven safe pan sprayed with cooking spray and top with half the cheese. Pour egg whites on top of the vegetables. Add the remainder of the cheese on top of the eggs. Place the omelet in a preheated 350 degree oven for about 15 minutes.
