Parippu - Mung bean stew

Dried Mung Beans (whole or split) - 1 cupTurmeric - 0.5 tspSalt - 0.5 tspGarlic - 2 cloves, mashedCoconut (frozen, shredded) - 0.5 cupCumin (powdered) - 1 tspWater - 2 to 4 cups
- Bring to a boil the mung beans, turmeric and salt in 2 cups of water.
- Turn the heat to medium and let the beans cook until soft (approximately 15 to 20 more minutes), adding more water as needed. You want a thick, soft stew.
- Add in the mashed garlic, frozen shredded coconut and powdered cumin. Taste and adjust seasonings as needed.
- Let it cook on low heat for another 5 minutes, to allow the flavours to blend in, and to allow the frozen coconut to mix in properly.
- Serve hot with rice and any Indian curries you've got lying around. :)
- Makes 6 half-cup servings or more, depending on how much water was added.
