Pork Chops with Pineapple-Onion Blue Cheese Sauce

6 Pork Chops (Lean & Boneless) each 1-1.5 inches thick1 Tbsp. Olive Oil 1 cup Pineapple Juice 1 Medium Onion Sliced1/4 Cup Blue Cheese Crubles1 Tbsp. Onion PowderSalt & Pepper to Taste
1.) Pat dry pork chops with paper towel and season both sides with onion powder, salt & pepper.
2.) In a skillet over medium to medium high heat heat olive oil. Add chops.
3.) Sear chops on both sides(5-6 minutes, may vary depending on your stove) until golden brown (this will keep them juicy!), remove chops and put on plate.
4.) Add onions to skillet and let cook until carmelized then add pineapple juice, a dash more of onion powder, salt & pepper.
5.) Bring to a boil, then add blue cheese crumbles and whisk until sauce becomes smooth and creamy.
6.) Reduce heat to low and add the chops back into skillet to finish cooking (8-10 minutes, may vary depending on your stove), spoon the pineapple/onion/blue cheese mixture over the chops.
7.) Serve with a tiny sprinkle of blue cheese on top and some fresh chopped parsley for garnish.
*You can also use low-fat blue cheese crumbles if you can find them in your grocery store.
*I serve this with a big garden salad and low-fat blue cheese dressing! Mmmmm!
