Fauxtato Soup

Ingredients
2 cups of chopped raw cauliflower2 cups of chopped raw celery1 cup diced onion2 cups Chicken Broth1/2 cup light sour cream1/3 cup grated parmesan cheesesalt & pepper to taste
Directions
Dice/chop vegetables and place in saucepan with broth, salt and pepper. Cook over low heat until cauliflower is soft (around 45 mins). Transfer to blender and puree. Place back into saucepan and cook on low heat with sour cream. Garnish with parmesan cheese and pepper.
