Crock Pot White Wine Chicken

Ingredients
2 lbs boneless skinless frozen chicken breasts8 oz white mushrooms, washed and sliced6 small green onions, cut in half crosswise3/4 cup dry white wine, such as Pinot Grigio1 packet apple cider mix, dry powder1/4 cup water
Directions
Layer in a large (6qt) crock pot, half the chicken, half the mushroom slices, and half the green onions.
Repeat layers.
Measure out the wine into a small glass bowl (or use a 2 cup graduated glass measuring cup) add cider mix and whisk.
Pour this mixture over the layers already in the crock pot. Add about a quarter of a cup of water to the bowl or measuring cup to rinse out the last bits of cider mix, and pour into crock pot.
Cook at low for about 8 hours, until chicken is cooked through and tender.
Serves 8.

    Bland... I did have to salt it. Glad I basted about hour 5 as the tops were all dryed out, it did end up being very moist. But I also thought I would taste more "apple cider" flavor. - 7/7/08
