Carrot Apple Rice Muffins

Combine and set aside:1 C unsweetened applesauce1 t lemon juiceMeasure and Mix together:2 cup rice flour1 tsp soda1 tsp cinnamon1/2 tsp cloves1/2 tsp salt1/2 cup raisinsIn another bowl mix together: 1/2 cup extra light olive oil1/3 cup agave syrup2 eggs1/2 cup pumpkin seeds/sunflower seeds/ or walnuts
Add applesauce and dry ingredients alternately with the other liquid ingredients. Beat well. Stir in the nuts and raisins.
Makes 12 muffins.
Cook at 350 deg for approx. 20 minutes.
