Bean and Bacon Soup

130 grams cooked bacon, about quarter pound after cooking1 large carrot, peeled2 large celery stalk, leaves and all, chopped1 medium onion, chopped4 cloves garlic, chopped500 grams white beans, after draining100 grams tomatoes, fresh, chopped1 beef bouillon cubesalt and pepper to taste
makes 4 big servings
Put all the veggies in the food processor and chop.
Cook bacon, drain but leave enough grease, put in soup pot and sauté veggies. Add the drained and rinsed beans, water, 4 cups, you can use more or less, beef cube and simmer for about 30 minutes.
Taste for salt and pepper, leave as is, or use the masher or immersion blender just a few seconds.
Add more water if it is too thick.
