Alaska Salmon Potato Cakes

Ingredients
1 can Alaska Pink Salmon2 1/2 cups prepared mashed potatoes2 egg whites1/2 cup sliced green onionscanola oil for frying dry bread crumbsHorseradish-Dill Sauce
Directions
Cook potatoes, drain and mash.
Drain salmon and break into chunks and set aside. Mix mashed potatoes with egg whites and pasrsley until smooth and well combined.Gently mix in salmon and green onions. Heat oil in large skillet over medium heat. Form mixture into 1/4 cup patties, coat with bread crumbs,and fry 2 to 3 minutes on each side, or until golden brown.serve with Horseradish -Dill Sauce
1/2 cup mayo,1/2 cup plain ygurt,1 Tablespoon prepared horsradish,1/4 teaspoon dill weed,and black pepper to taste. Whisk together.
