Whole Wheat Cornbread

Ingredients
1 c Cornmeal (fresh ground is best)1 c Whole Wheat Flour1 t salt4 T Baking Powder1 c milk1 medium egg1/4 c butter
Directions
Preheat oven to 425F. Place butter in an iron skillet and put in the oven to melt.

Mix flour, cornmeal, salt and baking powder.

Mix in egg. Add milk and stir until lumps disappear.

When butter is melted, swirl it around the skillet, then pour into the batter. Mix the butter into the batter and then pour back into the skillet.

Cook for 25-30 minutes.

Makes 12 smallish slices
