Amy's version - Crustless Salmon Quiche

Ingredients
1 can salmon1/2 c cheddar cheese1/2 c mozzarella cheese4 eggs1 c milk1/2 chopped onionMediterranean Fish Seasoning1 T lemon juice1 1/2 C frozen spinach
Directions
Saute onions in cooking spray, and add to the salmon, cheeses, lemon juice and seasoning. Mix and pour into greased quiche or pie plate. Slightly beat eggs, add milk, then pour over salmon mixture. Bake in 350* oven for 45+ minutes until mostly set. Let stand for 10 minutes before serving.
