Crockpot Chicken Italiano

Ingredients
4 boneless skinless chicken breasts (can be frozen)1 medium leek sliced1 bunch fresh spinach, cut no stems1 large diced onion2 cloves fresh garlic - diced or pressed1 can (14oz) cannelini beans or white northern drained1 can (28oz) diced tomatoes, italian style1 jar fire roasted red bell peppers - drained1 med artichoke heart, cleaned and quartered2 TBS extra virgin olive oil - dividedoptional - grated parmesan
Directions
Drizzle 1 TBS olive oil in obttom of crock pot. Layer onion and leek, followed by chicken breast, Drizzel other olive oil - season with salt and pepper. Add garlic, beans, artichokes, tomatoes, roasted peppers, and spinach. Cook on low for 6 hours. Sprinkle with cheese before serving.

    Super easy and tasty. I probably would use cut up chicken as it is quite more soupy than I thought but the flavour was nice. - 2/24/09
