Chocolate Bran Muffin

Ingredients
1/4 cup wheat bran1/4 cup spelt1/2 cup and 3 T buttermilk or plain yogurt2 T applesauce1 egg white1/4 cup packed brown sugar2 packets splenda1/2 cup whole wheat flour1/4 cup unsweetened baking cocoa1/2 teaspoon baking soda1/2 teaspoon vanilla1/8 teaspoon salt2 T miniature semisweet chocolate chips
Directions
1. Heat oven to 375°F. Place paper baking cup in each of 12 regular-size muffin cups.
2. In medium bowl, mix spelt flakes and buttermilk; let stand 5 minutes. Stir in applesauce and egg. Stir in remaining ingredients except chocolate chips. Stir in chocolate chips. Divide batter evenly among muffin cups.
3. Bake 15 or until toothpick inserted in center comes out clean. Immediately remove from pan. Serve warm.
