Creamy Spinach Soup

Ingredients
1 white onion 2 c. fresh spinach1 medium sized potato (white or red, no skin) diced2 T. Better Than Bouillon Chicken Base, reduced sodium4 cups water1 c. cooked brown rice1 cups 2% milk 2 tbsp corn starchsalt to taste (optional)
Directions
Put all ingred. in med. saucepan except cornstarch and milk and boil till potato is done. Pour in blender and puree. Return to heat, add milk and cornstarch mixed with a little water. Bring back to a boil till it thickens a little.

    It's good in general, only I didn't add rice. I never mix rice with potatoes or pasta in the same meal. - 7/26/09
