Homemade, No Sugar Added, Applesauce

10 large apples (about 5 pounds)1 tsp ground cinammonJuice from peels and cores of 10 large apples
1. Peel and core all apples, reserving the peels and cores
2. Slice the apples into chunks as you are peeling / coring them, add to large pot
3. If you have a juicer, take all of the peels and cores and put them through the juicer. This should produce about a cup of liquid. Add juice to apples.
4. If you do not have a juicer, add 1/2 cup of water to the apples.
5. This may not seem like enough liquid but it is! The apples will release their juices while cooking.
6. Cook apples on medium-low heat for about 1/2 an hour or until soft.
7. Add cinammon
8. Once apples are soft, use an immersion blender to make the texture as smooth as you'd like it. I usually leave quite a few chunks in the applesauce.
Eat it warm or cold. For a special treat, I'll eat it warm over low fat vanilla ice cream! It will get quite a bit sweeter as well once it's been cooled in the refrigerator. Makes about 15 half cup servings.
