Chicken Sopa (enchilada casserole)

Ingredients
(4) Chicken Breasts - fully cooked and chopped (1) cup - Onion - diced (optional)(3) tbl - Butter(1) can - Cream of Mushroom soup - low fat(1) can - Cream of Chicken soup - low fat(1) cup - Chicken Broth(1) 4oz can - Green Chiles - not drained(1) lb - Cheddar Cheese - Shredded(8-10) medium Tortillas
Directions
Preheat Oven to 350 degrees and prepare 9x13 inch casserole dish with cooking spray.

Saute onions in butter, add soups, broth and chiles. Mix in cooked chicken. Slice tortillas into quarters.

Spread a small amount of the sauce in the bottom of the casserole dish. Palec a layer of tortillas then cover with 1/3 of the chicken.sauce mixture. Sprinkle lightly with cheese. Repeat 2 more times.

Cover the top with the balance of the cheese.

Cook on the middle rack of your oven for 30 minutes. Cheese should be melted but not browning.
